Their movements, carefully timed and precise, the heritage of of an ancient and guarded tradition, protected and carried forward from one generation to the next, coexist today with state-of-the art technologies. This ensures the optimum control of the entire production stage in away that guarantees the best quality.

Technology and innovation.

To “Latteria Sociale Mantova” quality means having one of the the most up to date and modern production systems in which tradition and innovation fit perfectly together to create reliable, safe and certified products, capable of representing the authentic flavours of the Mantua lands.

A top notch production structure, boasting the most modern equipmentwhich have allowed our Cooperative to growfrom 16 to 90 millions litres of transformed milk per year, a 67% growth, to reach an annual production of 180,000 wheels of Grana Padano.

Continuous focus oninnovation has allowed us, with great respect to the environment, to enhance our whey thanks to the latest concentration equipment, the first of its kind in Italy which produces more than 150,000 tonnes of whey per year.

Our Cooperative is specialized in the production of Grana Padano cheese but we also sell all kinds of P.D.O.* Italian cheese.

Production cycle:

In brief, the main phases concerning the production of Grana Padano cheese MN 427 are the following:

  1. Dairy cows feeding,
  2. Cows milking and animals health.
  3. Daily analysis of the milk through the best public and private laboratories,
  4. Caseation through natural rising to the surface of the fats, modified by the natural changing of the seasons,
  5. Brining of the wheels,
  6. Slow ripening and constant control of the maturation,
  7. Cheese brand-marking by the “Consorzio per la Tutela del Grana Padano”
  8. Sizing and packaging,
  9. Sales and distribution of our products in Italy and abroad,
  10. Customer service and after-sale service
